We have been making these since 1982. We debone a 12-14 pound turkey, a chicken and one half of a domestic raised duck breast. With the domestic duck breast it will not have any wild taste. We lay out the turkey and sprinkle some of our special seasonings on it. Next, we layer our famous crawfish cornbread dressing. Then we lay the chicken on top of the turkey. Season and layer more dressing. Last, we put the duck breast in the middle. We then roll it up and sew the seam together so the juices stay in the turkey as it bakes. Our finished turducken will weigh 14-15 pounds and will feed 15 people.

Deboned Stuffed Chicken
We debone a chicken and stuff it with one of the following stuffings. Either crawfish cornbread, dirty rice, crawfish etoufee, or seafood dressing which is a cornbread dressing with baby shrimp and crabmeat.

Cajun Fried Turkey
We inject our turkeys with both a liquid blend of spices and blend of dry spices. We let them marinate for 48 hours and then deep fry them. We use a 12-14 pound turkey.
Crawfish Cornbread Dressing
We make a traditional cornbread dressing. Then we saute crawfish in our blend of seasonings and chop them in a food processor. We then mix the crawfiish throughout the dressing for a wonderful flavor.

Cajun Fried Turkey Gravy
We make a giblet style gravy, but we don't add any giblets. In place of the giblets, we add chopped fried turkey.
